Follow-up to routine inspection conducted on Aug 21 (Rpt# 241419) Walk-in cooler was serviced at 5pm yesterday. Cooler now has ambient temperature of 4.0C. Egg salad and minced meat salad were probed inside the cooler - both had an internal temperature of 4.0C. Low-temp dishwasher has 100 ppm chlorine residual at the plate on final rinse. Note: Routinely maintain accurate logs for walk-in cooler and dishwasher. Contact the district health inspector immediately if there are problems that cannot be resolved (e.g. cooler unable to maintain 4C or lower, no sanitizer dispensed from dishwasher).
