Observation (CORRECTED DURING INSPECTION): One pail of Quats sanitizer had no detectable concentration of sanitizing solution.
Corrective Action(s): Ensure sanitizer pails are changed every 2 hours as per your approved sanitation plan. Quats sanitizers at 200ppm is required for proper sanitizing of food contact surfaces. Pail was refilled with 200ppm Quats sanitizer at the time of inspection.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): One of the handwash stations in the kitchen ran out of single use paper towels.
Corrective Action(s): Ensure all handwash stations are easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels at all times to facilitate proper handwashing. Ensure staff monitor supplies and replace as needed. Paper towel dispenser was refilled at the time of inspection.

Observation: Mouldy food debris was found along the door seals for the 2 prep cooler and sandwich cooler.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times.

Observation: Door seals for both prep cooler are torn and need to be repaired or replaced.
Corrective Action(s): Ensure door seals are maintained in good condition to prevent accumulation of debris and to prevent loss of cold refrigeration air.

Comments

-Walk-in cooler was at 2C; Walk-in freezer was at -18C.
-Sandwich prep cooler was at 2C.
-Both prep cooler were less than 4C.
-Dairy front display cooler was at 4C.
-Hot holding units were greater than 60C.
-Staff are monitoring and recording temperatures on a daily basis - ensure manager approves records each day and required corrective actions are followed-up as needed.
-High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum 71C required for proper sanitizing).
-Staff observed practicing proper glove usage - discarded gloves whenever hands became dirty.
-Spoons stored in a mixture of ice and water.
-Ice Capp machines disinfected with Quats sanitizing solution - tested at 200ppm.
-Foods properly stored off the floor, covered, and protected from potential contamination.
-Staff and customer washrooms clean and sanitary.
-Facility serviced by Abell Professional Pest Control services. Reports not available on-site for inspection. Ensure a copy of the pest control reports are kept on-site for future inspections. No signs of pests noted at the time of inspection.
