Observation (CORRECTED DURING INSPECTION): 1) Dirty wiping cloth stored directly on the prep tables in the main kitchen.
2) Build up of food debris on scoops for dry food items.
3) Food debris found directly inside the sanitizer bucket. The sanitizer solution looked murky.
Corrective Action(s): 1) Store all wiping cloths inside the sanitizer bucket. All wiping cloths must be presoaked in sanitizer until ready to use.
2) Wash and sanitize all scoops. Keep all scoops free of any build up of food debris.
3) Prepare new sanitizer solution. You must change the sanitizer solution frequency throughout the day to keep the solution free of any dirt or food debris.

Observation (CORRECTED DURING INSPECTION): Plastic cups stored inside the designated handwashing sink in the front serving station.
Corrective Action(s): Remove the plastic cups. This sink is designated for handwashing. Keep all handwashing stations free of any utensils, equipment, or other food contact surfaces and other obstructions.

Observation: 1) Double stacking of vegetables stored in take out containers. Food items directly touching the containers.
2) Multiple food items stored inside the prep and walk in cooler uncovered.
Corrective Action(s): 1) Do not double stack food items.
2) Cover all food items with proper lids or plastic wraps.

- General sanitation is satisfactory.
- All other handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All coolers (walk in, prep) < or = to 4C.
- All freezers (walk in) < or = to -18C.
- You must begin a temperature log for all coolers and freezers. Keep records for review by the health inspector.
- All hot holding units (rice cooker) > or = 60C.
- High temperature dishwasher (stationary) achieved 72C at the plate's level during the final rinse cycle.
- Surface sanitizer available in white buckets with presoaked wiping rags at 100 ppm bleach solution. Ensure to provide surface sanitizer at each station (ie. main kitchen, serving area, bar) at all times to clean and sanitize any food contact surfaces.
- Dry storage area is satisfactory.
- No signs of pest activity.
- FOODSAFE certified staff on duty.
