Observation (CORRECTED DURING INSPECTION): 1) Sticky fly trap with flies on it was hanging above the prep sink area
2) Dry storage rack by the back door which has food items on it (seasoning salt, canned goods, etc) had non food items stored beside and on racks, including utility gloves, brooms/sweeps, recycled bottles, etc.
Corrective Action(s): Remove sticky fly trap (you can place a new one if needed in the back area away from prep sinks and food areas). Move all non food items away from food storage areas.

Observation (CORRECTED DURING INSPECTION): 1) At time of inspection, there were 12 seats in the dining area.
2) Table top where dishes are put after being washed/rinsed/sanitized requires repair. Operator indicated he will be placing metal sheeting on top.
Corrective Action(s): 1) Remove two seats or obtain a commercial dishwasher. If you have more than 10 seats, you will need a commercial dishwasher in your kitchen.
2) Repair table top surface or install the metal sheeting before next inspection.

Routine inspection conducted:
Two handsinks available: One beside the stoves and one beside the pizza prep cooler. Both stocked with liquid soap and paper towels and hot/cold running water.
Walk in cooler was at 1.8 deg C
Prep cooler at 3 deg C
Chest freezers at -18 deg C or less
Hot held unit with pizza in front area at 62 deg C
3 compartment sink with bleach available to sanitize. As discussed, prep/vegetable washing is to be done prior to any dishwashing.
Bleach spray bottle is at 100 ppm chlorine residual
Foods in coolers are covered
General sanitation is good (floors, equipment)
No signs of pests during inspection
Ice cream freezer not in use.
Operator has renewed FoodSafe level 1 and has copy of certificate on site.
Permit is posted with valid decal
