Observation: Meat patties and skewers are made ahead of time and left on low heat or on counter to be reheated upon order.
Corrective Action(s): Discussed this issue with operator before as this is unsafe food handling practice. Keep the food >60C until order (optional to reheat once properly cooked to 74C) or cook to serve. Cooling is not a viable option due to limited space.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bar sanitizer bucket and kitchen detected 0ppm bleach. Only spray bottle of bleach sanitizer with 100ppm had very low level left.
Corrective Action(s): Ensure both bar and kitchen sanitizer have 100ppm bleach available to use.

Observation (CORRECTED DURING INSPECTION): Bar handwashing station had a used Vietnamese drip coffee cup, a glass and sanitizer bucket stored in the sink.
Corrective Action(s): Please remind all staff that all handwashing stations must be accessible. Do not store anything inside the sink.

Observation: 1) Several inserts in the back cooler were uncovered (e.g. sliced meat). 2) Fleece blanket used to cover bread. 3) Bread is stored on the ground.
Corrective Action(s): 1) Ensure all foods are covered when not in use. 2) Remove fleece blanket, use a proper food grade container. 3) Lift bread 6 inches off the ground.

Observation: Food debris is noted in the back around freezer. Exhaust hood has collected heavy grease. Bar area is cluttered.
Corrective Action(s): Please clean the noted areas properly by follow up inspection. Declutter the bar area to allocate space for restaurant operation.

Observation: Produce and prep cooler were measured between 7 and 10C. The units are both jam packed and constantly opened and closed.
Corrective Action(s): Do not adjust the temperature to warmer, both units must be maintained at <4C or colder.
