Follow up inspection conducted:

-Operator now has valid FoodSafe certificate
-3 Compartment sink has plugs in sinks (Ensure plugs are always available at each compartment)
-Bleach water surface sanitizer present at 100 ppm chlorine residual
-Operator has removed old upright cooler along back wall to make more room for the fried chicken prep area
-Operator submitted food safety plan for the fried chicken. As discussed, fried chicken is currently only made per order. There is no hot holding, cooling, or re-heating. Raw chicken gets portioned and marinated in the raw meat area of the premises, and then gets packaged. When an order is placed, the operator takes the chicken out of the package, and batters is at the batter station ( beside the frying machine). Chicken goes directly from batter into the deep fryer, and then into the single use container and out to the customer.
-All removable components must be washed/rinsed/sanitized in your 3 compartment sink
