Observation (CORRECTED DURING INSPECTION): Walk-in cooler contained eggs that were dirty and cracked. Operator stated the eggs are not used in any of the food prepared at the facility. Eggs were discarded during inspection.
Corrective Action(s): Ensure that all food items obtained are from obtained from approved sources. For eggs in particular, they must be clean, uncracked, and graded

Observation: 1) Food items in the walk-in cooler, such as potatoes and cheese, were located on the ground.
2) Food items in the walk-in cooler were left uncovered and unprotected against contamination

2) Food items that are not being used immediately or cooled down need to be covered with a food grade material

Corrective Action(s): Service person called for repair of dishwasher during inspection. Ensure that dishwasher can reach 50ppm of chlorine. Use three compartment sink until dishwasher is serviced.
