Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: bleach sanitizer solution spray in the back kitchen broken, unable to spray solution. Another spray bottle was not broken however the sanitizer measured 0 ppm chlorine
Corrective Action(s):
Discard the broken bottle and ensure that sanitizer solution is readily available for sanitizing surfaces. Sanitizer solution must be maintained at 100 ppm chlorine.

Observation: REPEAT OBSERVATION: various buckets of food stored around the back kitchen found to be stored on the floor and without lids.
Corrective Action(s): Ensure that all food is protected from contamination. have covers and lids for all open containers of food.

Observation: white mold growth observed on condenser drain pipe in the walk-in cooler
Corrective Action(s): clean and sanitize the pipe immediately. this must be done on a more frequent basis.

Observation: Cardboard lining shelves in the kitchen. cardboard was soiled with grease and food debris.
Corrective Action(s): Remove the cardboard since this surface cannot be easily cleaned and attracts rodents.

Observation (CORRECTED DURING INSPECTION): Front of house staff had removed one door from the 4 door hot holding display case in the front of house. This is not permitted and previous correction orders as well as violation tickets have been issued.
Corrective Action(s): Similar future infractions may result in the issuance of correction orders directing replacement of the hot holding units or suspension of permit as well as further violation tickets
Correction order issued today; do not remove the sliding doors from the hot holding unit.

=High temperature dishwasher had a final rinse temperature of 72.6 C at the dish surface (minimum 71 C required for proper sanitizing)
=bleach sanitizer solution at 100 ppm chlorine available in some spray bottles
=Dedicated prep sink available for food preparation
=No evidence of pest activity noted at the time of inspection
=Staff hygiene was satisfactory at the time of inspection; staff FOODSAFE certification verified. Discussed FOODSAFE certification expiry.
