Observation (CORRECTED DURING INSPECTION): Disposable gloves (on hands) were being washed and reused by the dishwashing staff, between handling clean and dirty dishes.
Corrective Action(s): Gloves discarded. New dishwashing gloves provided. Ensure all dishwashing staff change gloves between handling dirty and clean dishes, and wash hands thoroughly with soap and warm water after any activity that might contaminate their hands.

Observation (CORRECTED DURING INSPECTION): White mixing whip attachment was again found to have cracked/chipping paint. Staff state this was a new attachment, purchased after last inspection.
Corrective Action(s): Discarded. Ensure mixing attachments and other utensils are maintained in good condition, and are discarded/replaced as necessary.

304 - Premises not free of pests [s. 26(a)]
Observation: A significant number of fruit flies were observed in the area surrounding the green waste macerator.
Corrective Action(s): Increase pest control measures to control this issue. Ensure any food stored in this area is wrapped and protected from contamination. Note: ensure back door to kitchen is kept closed - install a tightly-fitting screen door if you wish to leave this open.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Hot water tap at hand sink beside ice cream station provided a very low flow rate.
Corrective Action(s): Increase hot water flow rate by tomorrow (17th August 2017). Ensure paper towels are also provided at this sink - staff may not be able to use the closest designated hand sink by the dish pit if the kitchen is very busy. Sink by ice cream counter may be used as a backup hand sink.

*Quat sanitizer available at 200ppm in spray bottles and cloth bucket.

*Tools and utensils generally stored in clean condition. Note: ensure muffin trays are thoroughly washed, rinsed and sanitized prior to placement in clean dish racks.
