Observation: The the door of the glass-door cooler at the front serving area was not sealed properly. The door automatically opens and could not maintain closed for more than 10 seconds.
Corrective Action(s): Fix / service the cooler door to ensure it can remain closed properly. Correct by: May 8, 2019.

Comments

Routine inspection:
- Coolers ( stand-up, glass-door, prep, beverage) maintained at 4C or less.
- Chest freezer at the serving area not in use.
- Chest freezers and stand-up freezer functional.
- Cooked meats hot held at 72C.
- Operator stated donair undergoes a secondary cooking step.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium available in spray bottle and from the dispenser.
- 3 compartment sink available for manual dishwashing.
- No pest activities observed.

Note: Ensure to maintain temperature logs on a daily schedule for all refrigeration units.
