Premise is sanitary. No signs of pests at the time of inspection. Pest control service program in place. Hot and cold water available. Dedicated hand sinks with liquid soap and paper towels available. Staff demonstrate good personal hygiene and sanitary hand washing. Washrooms are sanitary with fully stocked hand sinks. Ice machine and stations are sanitary with dedicated hand scoop. Temperature holding is adequate and in use with accurate thermometers and logs. 2-compartment sink in use. Quat sanitizer in use at 200 ppm. Dishwasher final rinse at 71C at the plate. Note: This unit has been converted back to hot temperature sanitizer. Please ensure this unit is able to reach 71C at the plate and above even during busy rushes. The unit drops in temperature after 5 consecutive washes. Glass washer final rinse at 12.5 to 25 ppm Iodine. Chemical test strips and logs available. Valid Permit posted in conspicuous location. Holding units: All cooler units at 4C and below. Walk in freezer at -18C and below. Hot holding unit for soups and sauces at 60C and above. Walk in freezer has been defrosted and is in good working condition. Knife rack has been cleaned. Kitchen hand sink leak and service cooler water leak has been fixed. Outstanding item: Awaiting final repairs on grease trap. Unit is maintained in a sanitary manner.
