Routine inspection conducted:
- Service area glass sandwich cooler at 4 degrees C.
- Service area beverage cooler 4 degrees C.
- Walk in cooler at 1 degree C.
- Preparation cooler at 4 degrees C.*
- Left reach-in freezer at -19 degrees C.
- Right reach-in freezer at -20 degrees C.
- Ice cream freezer at -20 degrees C.
- Hot holding internal food temperatures at 60 degrees C or more.
- Cooked food (soup) internal temperature measured at greater than 74 degrees C.
- Probe thermometers on site for internal temperature checks.
- Prepared food items are covered and labeled.
- Raw animal products are not stored above ready-to-eat food items.
- Cooling wands on site.
- Food items stored off the ground. Sample of canned products were checked for damage and were observed to be in good condition.
- Hot and cold running water, liquid hand soap, and single use paper towels available for hand washing.
- High temperature dishwasher measured 79 degrees C at the utensil surface during final rinse (minimum 71 degrees C at the utensil surface).
- Equipment and utensils in sanitary condition.
- Quaternary ammonium compounds (quats) sanitizer available in labeled spray bottles, buckets, and from dispenser at approximately 200 to 400 ppm.
Note: Sanitizer instructions state quats may be used up to a concentration of 400 ppm for a no-rinse food contact surface sanitizer.
- No signs of pest activity observed at time of inspection.
- Temperature logs in use and up-to-date.
*Lowest temperature achieved. It was stated that small quantities of food are kept in the unit only during food service; all potentially hazardous food items are removed following the food service period as temperature of unit fluctuates. Note: Inserts not in use for cooler, which may potentially contribute to loss of cold air over time.
