Observation (CORRECTED DURING INSPECTION): 1) Sanitizer bucket had 0ppm chlorine. Operator had advised they ran out of Clorox last night. Only minor processing occurring today. 100ppm chlorine solution was prepared at this time using dishwasher sanitizer. All prep surfaces were sanitized using this solution at this time.
2) Low temperature dishwasher achieving 0ppm chlorine. After priming the tube, the minimum level of chlorine was achieved at the plate level after final rinse.
Corrective Action(s): 1) Ensure 100-200ppm chlorine solution is available for use at all times. Restock Clorox before running out. Contact the health inspector after obatining the bottle.
2) Monitor chlorine level for the dishwasher on a regular basis using the test strips provided. Prime the tube always after replacing the sanitizer bottle. This is a repeated violation.

-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory.
-Food storage practice very good. All foods contained in/covered with food grade materials.
-No evidence of pest activity observed at this time.
-Washroom handsinks satisfactory.
-Facility maintained in excellent sanitary condition.

NOTE: Stand up freezer door requires a seal replacement.
