Walk-in cooler in kitchen: 5.9oC (at 12pm). Temperature log indicated 37.5oF this morning. Keep monitoring.
Walk-in cooler downstairs: 3.8oC
Walk-in freezer downstairs: -13oC
Temperature log is maintained

General sanitation is satisfactory
No signs of pests at time of visit
Dishwasher final rinse reaches at least 71oC on plate, as per thermolabel
Quats sanitizer noted in bucket. Quats sanitizer in bucket and dispensing system had at least 200ppm.

Note:
1. Noted some temperatures on log were over 4oC/40oF. Ensure staff notifies management and/or notes down any changes.
2. Walk-in cooler is the only cooler in kitchen, and it is heavily used during meal times. An undercounter cooler is highly recommended to ensure air and food temperatures can be maintained at 4oC or less at all times.
