*Discard previous solution and do not add bleach to old solution. Always prepare fresh solution.

Observation:
*A bucket of sauce and a container of fish were found uncovered in the walk-in cooler.
*Equipment was found stored directly on the floor.
*Cover for the rack was still missing.

*All food items in the cooler must be covered at all times.
*All equipment to be stored off the floor at all times.
*Ensure to provide the cover for the rack (still back ordered).

Comments

Food Safety Plan for samosas and "menu" submitted; however, they are still to be reviewed and approved.
Samosas from Gourmetwala were no longer kept in premises. Supplier/importer still under investigation to ensure these product come from an approved source.
**Do not obtain product from supplier until investigation is completed.**
Important: Dispose of old bleach solution from the day before. Always prepare new bleach solution daily (100 ppm) before any food preparation.
Dirty apron was again found hanging on the back of the door near the mixer. Dirty apron to be stored in separate container.
