Observation (CORRECTED DURING INSPECTION): Extra pizza boxes in the upstairs storage area was observed to have opened plastic covers/packaging. Boxes are exposed to potential contamination.
Corrective action: Operator removed and discarded exposed boxes. Ensure keep the packaging intact for the boxed and to keep boxes covered at all times.

Comments

Routine inspection conducted. Following observations noted:
1. Temperatures
Prep cooler bottom at 4.8C, top inserts at 4.0C (internal temperature of ham at 4.7C).
2 door cooler at 3.8C
Walk-in cooler at 2C
Beverage coolers (front and back) at less than 4C.
Temperature logs maintained and up to date.

2. Sanitations
All hand washing stations are accessible and equipped with hot and cold running water, liquid soap and paper towels.
3 compartment sink with drain plugs available.
QUATs at the dispenser at 200ppm.
QUATs in spray bottles at 200ppm.
Test strips for QUATs available.
In use utensils are cleaned and sanitized every 2 hrs.
Separate pizza slicers for gluten, gluten free, vegetable and meat pizzas.
Overall sanitation satisfactory.

3. Storage
All foods are stored above ground at least 6 inches.
Raw foods are stored below and away from ready to eat foods in the coolers.
All food items are covered.

4. Pest activity
No visual signs of pest activity during the inspection.
Pest control program in place on a monthly basis.
