Observation: New open display cooler noted at 1 C at the bottom and up to 12 C at the top shelf (4 sections total).
Correction: Ensure cooler is calibrated and used properly (with front curtain/doors) to maintain a temperature of 4 C. Re-organize PHFs (meats, tofu, mushrooms, sprouts,etc) to the bottom/ coldest part of unit. Adjust unit and monitor temperature.

Follow-up inspection to report #ZDER-BMJQPK
-Cooler unit has been monitored each morning and has thermometers noted on top (warmest) level. Noted each morning at 0 C with doors.
-Unit noted at 4 C at top and 1 C at bottom level with curtains during inspection
-All potentially hazardous foods (proteins, tofu, sprouts, mushrooms) have been stored at the bottom (coldest) level at 1 C during inspection
-Operator has talked to manufacturer and unit is functioning properly
***After the rush the doors must be placed back on the unit to maintain temperatures
-Sanitizer noted at 100 ppm chlorine at front and back in labeled spray bottles
-Plugs still available
