Observation: Facility had been deep-cleaned, however a few new mouse droppings were noted in the dry storage room again.
Corrective Action(s): Operator stated the room was cleaned entirely the previous night. Ensure your professional pest control company continues to visit every 2 weeks. Keep all food off the floors and in pest-proof containers. Check for new mouse droppings daily and clean/remove droppings and disinfect with 1000 ppm bleach solution as needed.

Comments

- Follow-up inspection to inspection conducted on October 4, 2022.
- Thawed fish was properly stored in walk-in cooler 4C or colder.
- No food was cooling out at room temperature at time of inspection. Reminder: hot food must be rapidly cooled from 60C to 20C in 2 hours, then from 20C to 4C within the next 4 hours in a refrigerator. Do not leave food out at room temperature for more than 2 hours.
- Bleach sanitizer solution available in pails at 100 ppm (chlorine residual) in each prep/food handling area - good.
- Dry storage room and dishwashing area have been re-organized and de-cluttered.
- Deep cleaning has been completed in dry storage room and in dishwashing area.
- Ventilation canopy hood has been cleaned and sanitized.
- Walk-in cooler has been re-organized

Reminders:
- Please continue with organization efforts and continue to remove any equipment/unused items from your facility to create more space.
- As discussed, consider getting an additional cooler onsite, or a reduction of menu items will be required.
- Monitor on a daily basis for any pest activity, such as rodent droppings. Clean and disinfect areas with droppings as soon as they are observed.
