Observation: No rodent activity in kitchen noted, but limited fruit fly activity noted.
Sticky tape for flies above prep area in kitchen.
*Possible cross contamination issue as discussed.
Mouse droppings evident in some areas on production side. Most areas actively controlled by Pest Control Contractor, but grain stoage rack section has notable activity.
Corrective Action(s): Remove sticky tape from food prep area(s).
Make sure sypups related spills are cleanied up right away and grease trap area is maintained clean and dry so potential breeding areas minimized.
Make sure to discuss with Pest Control technician and have grain racks targeted with trapping (either increase traps or re-locate).

Observation: Kitchen area observed unsanitary in following areas:
- floor below counters, especially in corners or behind legs of equipment;
- Below shelves with syrup or related spill;
- Water drip interceptor trough on turbo chef (also noted damaged seal);
Corrective Action(s): - Clean kitchen floor to rest level as discussed.
- Add more frequent schedule for cleaning to prevent food debris build up in hard to reach areas.
**Add duty to scheduled cleaning as discussed. Recommend having staff sign off completed work - needs oversight.
**Tray for liquids like balsamic/other vinegars etc. must be able to hold spills.
Reset should be completed within next 14 days then maintenance plan implemented with cleaning staff.

Comments

Make sure to change sanitizer (quats) in spray bottles on more regular basis. Recommend adding to cleaning schedule as discussed.
Make sure staff get hot water to bar sink taps before engaging dishwasher for glasswashing so proper sanitizing of glasses can occur. Hot water tank is some distance away and it takes time for hot water to arrive.
