Observation (CORRECTED DURING INSPECTION): The air and temperature of food in the walk in cooler is still above 4 C (7 C measured). A small volume of potentially hazardous foods are being stored in the walk-in.
Corrective Action(s): Discard soups and potentially hazardous foods that have been kept above 4 C for more than 2 hours.
Sausages thawing in the walk in can be moved to another cooler. All potentially hazarous foods (dairy, eggs, meat) must be stored at 4 C or colder. This is a repeat violation.

Observation (CORRECTED DURING INSPECTION): Dishwasher does not have a final sanitizing rinse (0ppm chlorine detected after the final rinse).
The dishwasher detergent bottle is also empty.
Corrective Action(s): Chlorine was provided during inspection and 50ppm chlorine now detected after the final rinse. Keep records for daily checks of the chlorine concentration. The detergent bottle was also replaced during the inspection.
