Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Low temp. dishwasher 0 ppm chlorine.

Soiled wiping rags left on food preparation surfaces with no detectable sanitizer residual.

Staff on duty unaware the difference between sanitizer to be used on food contact surfaces and disinfectant to spray to be used on high touch surfaces.
Correction: All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Low temperature dishwasher is to be repaired to provide a minimum sanitizing cycle residual of 50 ppm chlorine.

Staff to be trained on correct use of food contact sanitizer and disinfectant spray for high touch surfaces.

Closure Order complied with and now rescinded, premise may re-open when ready.

Low temperature dishwasher repaired, 50 ppm chlorine detected after cycle completion.

200 ppm Quaternary Ammonia sanitizer containers filled to store wiping rags between uses.

Staff educated on use of Citron Sanex sanitizer - from dispenser at 200 ppm is suitable for food contact surface sanitizing, allow to air dry. This is not interchangeable for use as high touch surface disinfection which requires a far higher concentration and longer contact time to disinfect and at such concentration is not suitable for food contact surfaces.

BOH - handsink is empty and accessable for staff to wash their hands.

Ice scoop stored outside ice machine when not in use.

Ice machine has been cleaned.

Reviewed handwashing and glove use procedures.

Revised COVID-19 Safety Plan - Citron Sanex used as a disinfectant requires 10 minute contact time, is not a practical method for frequent high touch surface disinfection throughout the day. Bleach prepared at 1000 ppm chlorine (20 ml / 1 litre water) will be used in place.
