General sanitation good - deep frying area kept clean. Fume hood looks clean; cleaned 2-3 weeks as per AM. Ensure cleaning company puts date sticker next time. Hand sinks stocked with hot/cold running water, paper towels, and soap. Cooler temps below 4 degrees C. Hot holding units operating above 60 degrees C. 3 compartment sink readily available; high temp dishwasher sanitizing with 71 degrees C on plate surface. Sanitizer bottle with 200 ppm Quat readily available. Log books present and up to date. No signs of pests.
