Follow-up inspection:
- Fried chicken in the hot holding units measured with an internal food product temperature of 64C. Few changes made to the processing of the fried chicken: sauce was hot held above 60C in a water bath. The fried chicken was transferred into hot holding units at a faster rate after frying.
- One hot holding unit not in use. Manager stated it is not working properly.
- 100 ppm bleach sanitizer available at the 3 compartment sink. Test strips available.
- Fan cover in the walk-in cooler had been cleaned.
- Sanitation under the deep fryer had greatly improved.
- Two people had taken FOODSAFE Level 1. Ensure at least one person on site has FOODSAFE Level 1 during operation.
