Observation (CORRECTED DURING INSPECTION): A) No sanitizer buckets/bottles were noted at the time of inspection.

B) Staff was unable to demonstrate proper manual dishwashing method. Sanitizing compartment detected with 0 ppm chlorine.
Corrective Action(s): A) Must have sanitizer bucket/bottle at min 100 ppm chlorine (bleach) (1/2 tsp bleach + 1L water) before opening to clean and sanitize food contact surfaces.

Observation: A) Several food items (batters, bulk food items, baked goods) were found uncovered in the dry storage area, walk-in coolers/freezers and reach-in cooler, and in the cupboard.

B) Bags of Onions and potatoes stored in cardboard boxes are found on the dry storage floor near the back door.
Corrective Action(s): A) All food items must be covered with food-grade saran wraps or tight-fitting lids/covers to protect food from contamination.

B) All food items must be 6" off the floor to protect it from contamination, facilitate cleaning and to prevent attraction of pests.

Corrective Action(s): A) Repair/resurface the tiles so that they are smooth, easy to clean, durable and impervious to water and organic matter that can harbour bacteria.

B) All light fixtures must be shielded with shatterproof coverings to prevent the contamination of food from glass fragments in the event of breakage.
