Observation: Storage area was found to have live rodents in tin cat monitoring stations. Facility is currently serviced by professional pest control services.
Corrective Action(s): Continue to have facility serviced by professional pest control services and apply control measures as needed to prevent further pest infestation. To eliminate pest infestation, the following actions are recommended: seal potential entry points for rodents, store foods in pest proof containers and 15cm off the ground, maintain the facility is a clean and sanitary condition, and remove any garbage/water at the end of the night.

Comments

Store:
-Refrigeration units were at or less than 4C.
-Freezers ranged from -12C to -20C.
-Cut melons were at 4C.
-Random selection of foods were found to be in good condition and within their best before dates.
-Random selection of baby foods and nutritional supplements were within their expiry dates.

Meat Cutting:
-Walk-in cooler was at 3C.
-Meat display cooler was at 4C.
-Meat cutting area was at 10C.
*Temperatures for the display cooler are taken during defrost modes (temperatures records indicate temperatures between 6C to 9C without corrective actions).
-Cleaning and sanitizing carried out in the 2-compartment sink. Quats sanitizer was tested at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Meat saw and meat grinder disassembled for cleaning and sanitizing at the end of the day. Equipment is stored in the walk-in cooler at 4C.
-Meat cutting table is sanitized at least every 2 hours.

Back Storage Area:
-Walk-in coolers were at 4C.
-2-compartment sink Quats sanitizer was at 200ppm.
-Ice machine was clean and sanitary.
