Observation: Fruit flies observed throughout. Pest control technician is servicing restaurant once per week. Three traps placed in kitchen and one in each washroom. Drains are treated. Continue to trap for flies.
Corrective Action(s): NOTE: unable to locate pest technician service reports during inspection. Locate these items and review. The Pest technician report will outline recommendations to facility to follow in order to eliminate pest infestation.

Observation: Sanitizer dispensing unit not functioning properly. Unit does not dispense QUAT sanitizer at adequate concentration (0ppm QUAT observed during inspection). Facility currently uses Chlorine sanitizer solution for sink and front kitchen surface sanitizing in bucket.

Corrective Action(s): Remove this sanitizer dispensing unit to prevent uninformed staff from mistakenly using sanitizing dispensing unit OR repair unit such that it is working AT ALL TIMES This is the second inspection where the unit is being routinely serviced but not in use by staff as concentration does not achieve minimum 200ppm QUAT concentration.

- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Proper thawing techniques observed
- Ice machine and scoop in good sanitary condition
- Proper re-heating methods observed for previously cooked food items
- First In First out and date stamping methods observed in use
- Raw meat stored away from Ready to Eat food items
- Deep fryers are drained twice daily
