Comments

Routine cleaning schedule must be followed.
Reviewed procedures for ice cream scoops and other bowl/utensil cleaning:
1. Wash in warm water and detergent (dish soap);
2. Rinse with clear water;
3. Sanitize by soaking in 1 tsp domestic bleach in 1 litre water for 2 minutes; and
4. Air dry.
Use this procedure as well for the yogurt homogenizer.
Plain domestic bleach is available on-site.
Dipper wells are being used for ice cream scoops - wash and sanitize scoops every 4 hours.
Menu: scooped ice cream and gelato and hot dogs.
Reheat hot dogs to 74 C prior to serving.
Deep fryer (counter top) is no longer being used. Chicken nuggets, fish, and fries are no longer on the menu.
