209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Unopened, dented cans of tuna, and one can of chickpeas were found on the dry storage shelves. Dented cans have compromised seals that allow bacteria to enter the air-tight can - there is a risk that pathogenic bacteria will multiply and produce toxins once inside the can.
Corrective Action(s): Remove these items from service.

304 - Premises not free of pests [s. 26(a)]
Observation: A dead mouse was found in the sticky trap under the air-drying shelf by dish washing area. Mouse droppings were found behind chest freezer, in between walk-in cooler and wall, and a few found under dry storage shelves as well.
Corrective Action(s): Please remove the dead mouse, and replace the sticky trap. Clean the mouse droppings away - use bleach solution (1 teaspoon bleach to 1L water) to dampen these areas to prevent particles from droppings from becoming air borne and inhaled. Also, use bleach solution to sanitize. Monitor these areas for the return of droppings. If droppings return, it is recommended that professional pest control services are acquired.

Observation: Food debris and mouse droppings found behind chest freezer. Food debris found under shelves of walk-in cooler and freezer.
Corrective Action(s): Cleaning is needed behind the chest freezer and under the shelves of the walk-in cooler, and walk-in freezer floor.

Refrigeration/Freezer Storage:
-Walk-in cooler holds foods below 4 degrees Celsius, walk-in freezer and chest freezer hold foods below -18 degrees Celsius
- All foods kept covered in food grade material, stored off of floor
- Thermometers present for monitoring temperatures
- Proper cooling observed during inspection
- Shelves are free of filth
- No leaks from condenser lines

Dry Storage:
- Foods stored in pest-proof, food grade containers
- No heavy food debris accumulation under dry storage shelves
- All foods stored off floor
- No personal effects stored in dry storage area; good organization overall

Catering Equipment and Utensils:
- Insulated coffee creamer jugs and containers are clean, dry, and free of residue
- All clean equipment and utensils are stored on designated shelves, protected from contamination
- Meat slicer disassembled, cleaned, rinsed, sanitized and air dried as needed
- Single use service items are kept covered and protected on dry storage shelves, off floor

Sanitation and Hygiene:
- Hand washing sink adequately stocked
- 200ppm quats sanitizer in 3 compartment sink and spray bottle
- Proper air drying observed for cooking utensils and equipment
- Door handles of walk-in units were cleaned and sanitized during inspection
- Along doorways and entry ways there are rubber barriers (prevents entry of pests)
- Staff washroom is clean, well-ventilated, and adequately supplied with hand washing facilities
- Overall sanitation is satisfactory
