Observation: One self serve freezer in meat section (frozen breaded chicken) temperature is not cold enough (about -6C but varies).
Corrective Action(s): Frozen food moved to another freezer as a precaution. Re-check this freezer and defrost or service if necessary. The required temperature is -18C (0F).

Comments

Routine check of food store, home delivery storage, produce area, dry storage, and meat cutting .
Coolers appear to be at 4C/40F or colder.
Food delivery cooler and freezer - in compliance. Delivery truck - temperature records are kept.
*Do not overstock tofu - allow sufficient air flow in this cooler.
Freezers - satisfactory with exception of one self serve freezer - see above.
Cleaning - routine cleaning schedule has been developed and deep cleaning is scheduled.
*Deep clean the produce area.
Hand washing sinks in produce area and meat cutting area (2 sinks) have hot/cold water, liquid soap, and paper towels.
*Note: Caulking is worn and there is a gap between right side hand sink and wall in meat room. Seal gap between hand sink and wall to facilitate cleaning.
Quats sanitizer is automatically dispensed at both manual ware washing sinks in meat room and at janitor area - 200ppm detected. Test strips available.
Pest control - reviewed report. Door at back loading dock can close. Follow directions from licenced pest control regarding sealing cracks and continue monitoring for pests.
