1) Wash with detergent and water
2) Rinse with ONLY water
3) Sanitize with 50 ppm bleach (2 ml per liter of water)
4) Air dry

2) Dust build up observed on fan guards in walk in cooler
Corrective Action(s): 1) Ensure meat slicer and all food contact surfaces are cleaned and sanitized at least once every 4 hours. Recommend educating staff to perform cleaning at specific times (ex. 9am, 12pm, 3pm, 5:30pm)
2) Clean and sanitize the fan guards.
