Observation (CORRECTED DURING INSPECTION): Container of whipping cream observed stored at room temperature on the counter top in the top cooking area. Whipping cream measured at internal temperature of 20'C with probe thermometer. Staff voluntarily discarded the whipping cream during inspection.
Corrective Action(s): Do not store potentially hazardous foods at room temperature to prevent time-temperature abuse and bacterial growth. Potentially hazardous foods which are at room temperature for more than 2 hours must be discarded. Potentially hazardous foods must be stored in the cooler at or below 4'C at all times.

Observation (CORRECTED DURING INSPECTION): Hand washing station at pizza station observed not supplied with paper towel in dispenser. Manager placed paper towel in the dispenser during inspection.
Corrective Action(s): Maintain all hand washing stations adequately supplied with hot and cold running water, liquid soap and paper towel at all times to ensure staff are washing their hands properly and at adequate frequency to remove contamination before handling food.

Observation: Containers of pizza toppings observed stored directly on top of other open containers of pizza toppings in the preparation cooler.
Corrective Action(s): Move overlapping containers to another cooler area to prevent potential contamination of other open containers of pizza toppings. Do not double-stack containers of food. Ensure all food is covered and protected from potential contamination.

Observations:

- All freezers at or below -19'c
- Display coolers at or below 4'C
- Hot-holding units at or above 60'C
- General sanitation satisfactory during inspection
- Hand washing station upstairs and in staff washroom adequately supplied with hot and cold running water, liquid soap and paper towel
- Two 3-compartment sinks available with drain plugs and bleach
- Bleach sanitizer available in spray bottle (X1) and in pail with wiping cloth (X1) measured at 200 ppm chlorine concentration
- Equipment observed in good sanitary condition
- Ventilation canopy observed in good sanitary condition
- FOODSAFE Level 1 trained staff available on site
- No signs of pest activity during inspection

Reminders:
- Ensure all staff are trained on proper cooling procedures for large batches of cooked potentially hazardous foods. All potentially hazardous foods must be cooled from 60-20'C within 2 hours and from 20-4'C within 4 hours (Total of 6 hours). Use the available probe thermometer to verify food temperatures. Cool foods fast by placing food in shallow pans in an ice bath, mixing with an ice wand or using a blast chiller (or as per approved food safety plan).
