Observation: 1) Insides of prep coolers, cooler drawers, cooler handles, and cooler door seals had accumulation of food debris.
2) Dough machine was not maintained in sanitary conditions.
3) Dry ingredient storage bins and lids were not maintained in sanitary conditions.
Corrective Action(s): Clean and sanitize all items noted above, and ensure to do so on a daily basis.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray bottle was almost empty. Staff did not know how to properly prepare bleach sanitizer solution, and 3-compartment sink was not maintained in sanitary conditions.
Corrective Action(s): Mix 1/2 tsp of bleach per litre of water for proper concentrations (or 1 oz bleach per gallon of water).
The 3-compartment sink must be maintained in sanitary conditions for manual warewashing.

Observation: No hand washing station available in the back kitchen and dough making area, as the previous hand sink has been removed.
Corrective Action(s): A hand sink must be re-installed in the back area. Operator to submit floor plan proposals to Fraser Health. Supply the 3-compartment sink with liquid soap and paper towels in dispensers in the meantime. Hand sink in front service area is also available in the meantime.

Observation: 1) Food items stored in coolers were uncovered.
2) Cooked chicken in trays placed directly on top of leaking box of raw meat.
Corrective Action(s): 1) Store all food items properly covered and off the floor.
2) Store raw meat away from ready-to-eat food items and vegetables.

Corrective Action(s): Ensure to thoroughly clean and sanitize the facilty, keep the back door closed, and contact a professional pest control company for regular servicing.

Observation: 1) Back door was left open.
2) Lots of food debris and grease accumulation throughout facility.
Corrective Action(s): 1) Do not leave back door (or any door) open. Any doors that remain open must have a properly installed screen door to prevent pest entry.
2) Regular deep cleaning and sanitizing required to prevent accumulation of food debris and grease in all areas.

Observation: 1) Walls, floors, sides of equipment, shelves, countertops, and all hard-to-reach areas had accumulation of food debris (kitchen prep areas, dishwashing areas, dry storage areas, etc.)
2) Portable fans were also covered in food debris.
Corrective Action(s): 1) Deep cleaning and sanitizing is required on a regular basis. Once a week at minimum.
2) Clean and sanitize all fans, and keep them away from all food preparation areas.

Observation: Staff stated walk-in cooler had been expanded 2 months ago, and hand washing sink in the back area had been removed.
Corrective Action(s): Any changes to facility layout must first be approved by Fraser Health. Submit a floor plan drawing of current layout and any additional proposed changes.

Comments

- Hand sink in front service area properly supplied with liquid soap and paper towels.
- All coolers were maintaining temperatures of 4C or colder.
- Freezer measured at -20C.
**Major improvements in sanitation is required.**
- Ensure deep cleaning has been done for the follow-up inspection and a professional pest control company has been onsite. Also remove any items that are not in use.
