Observation: cutting board on prep cooler was heavily stained with food debris, and is no longer easily cleanable nor in good condition
Corrective Action(s): Replace cutting board with new easily cleaniable boards, ensure to sanitize it every four hours or after each use, then wash rinse and sanitize every night.
