Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher is not pulling up sanitizer. Tube is dry or has large air bubble.
Sanitizer is in supply.
Correction: Fix dishwasher to ensure it pulls up sanitizer (Quats must be 200ppm; chlorine must be 50-100ppm)
Discussed alternative method of sanitizing dishes.
Operator to wash dishes in the dishwasher and then soak in bleach solution in the 2 compartment sinks. Tested to be 100ppm chlorine.

Follow up on Food Safety and Dishwasher:

-Dishwasher 50-100ppm Chlorine (200ppm measured - ensure this is 100ppm and not increasing above, or else rinsing may be needed)
-Test strips for checking sanitizer is recommended as a part of daily cleaning plan.
-Bleach sanitizer measured above 1000ppm. Ensure that this is between 100-200ppm.
-Lids are closed for raw meats to protect from cross contamination from salads. Thank you. This storage practice is higher risk so ensure that this area is kept clean with bleach sanitizer.
-Areas appear clean, prep tables appear clean.
-Rotating spit - operator using secondary cook step.
