Observation (CORRECTED DURING INSPECTION): Ambient air temperature in the walk-in cooler measured at 7.5C. Internal food product temperatures for cooked meats and beans stored inside were measured at 7C to 8C. These food products were prepared in the morning in less than 4 hours.
Corrective Action(s): Move cooked meats and beans into the front area prep cooler. Do not stored any potentially harzardous food inisde the walk-in cooler until it can maintain an ambient air temperature of 4C or less.

Observation (CORRECTED DURING INSPECTION): Front area quaternary ammonium sanitizing bucket measured at 50-100 ppm. 200 ppm quaternary ammonium is required for proper sanitizing of food contact surfaces and equipment.
Corrective Action(s): Discard and refill the sanitizing bucket with 200 ppm quaternary ammonium solution. Verify the concentration on a regular basis with test strip.

- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium available from the dispenser and in the 2 compartment sink.
- High temperature dishwasher not in use. Manual warewashing set up at the 2 compartment sink.
- Temperature logs maintained and available for review.
- General sanitation satisfactory.
- No pest activities observed.
