Observation: Several shelving units for dry storage in the kitchen noted to have considerable accumulation of grease/debris build up. Staff had started to clean.
Corrective Action(s): Continue to clean thoroughly to remove debris/grease.

Observation: One of the handwash stations drains water very slowly.
***This is a repeat violation.
Corrective Action(s): Repair the blocked drainage so that water drains easily and does not accumulate in the basin (2 days).

Items Corrected:
- Hot held sauces above 60C.
- Bleach sanitizing solution 200 ppm; wiping rags stored in sanitizing solution when not in use.
- Proper cooling practices observed: cooled beef in smaller portions; placed food in a stronger cooler unit.
- Proper cold storage practices observed: less food stored in prep line inserts.
- Probe thermometer available for checking food temperatures.
- Thermometer provided in freezer.
- Table legs of cutting board table was cleaned and repainted.
- FoodSafe certificates presented.
