Observation (CORRECTED DURING INSPECTION): 0 ppm hydrogen peroxide disinfectant cleaner was measured in the spray bottles. Hydrogen peroxide disinfectant cleaner is used for dining tables according to the Assistant Manager.
Corrective Action(s): Assistant Manager directed staff to sanitize the empty dining tables with 200 ppm QUATS sanitizer during the inspection (Corrected during the inspection).

Manager informed that new stock bottles of hydrogen peroxide disinfectant cleaner are currently on order. Test strips available on-site at the facility to measure the concentration of hydrogen peroxide disinfectant cleaner were not past their expiration date.

The following still requires corrective action:
Check the concentration of the new hydrogen peroxide disinfectant cleaner stock bottles once received to determine if it is in accordance with manufacturer's specifications. In the interim, continue using the Quaternary ammonium compounds sanitizer (QUATS sanitizer) for sanitizing the dining tables. Contact the district Environmental Health Officer for a follow up inspection once the new bottles of hydrogen peroxide disinfectant cleaner are received.

Comments

Handsinks in the kitchen and staff washroom were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Walk-in-cooler and other refrigeration units were at or below 4 degrees C.
Walk-in-freezer was at or below -18 degrees C (measured at -23 degrees C).
Under-the-counter freezer and fries freezer temperatures were satisfactory.
Hot-held food was at or above 60 degrees C.
Electronic time-tracking for condiments up to 4 hours maximum was in place.
100 ppm chlorine sanitizer was available in the sanitizer pails.
200 ppm QUATS sanitizer was available in the spray bottles and dispenser at the 3-compartment sink.
Chlorine test strips and QUATS test strips were available on-site.
3-compartment sink was supplied with hot and cold running water. Three built-in sink plugs were available.
Ice machine is cleaned and sanitized on a weekly basis according to the Assistant Manager.
Ice machine and ice storage bin were in a clean condition at the time of inspection.
No signs of recent pest activity were evident at the time of inspection.
Pest control program was in place on a monthly basis.
Most recent pest control report dated January 9, 2023 from Ecolab noted no activity.
Assistant Manager had valid FOODSAFE Level 1 course training (expiration date: November 5, 2023).
It was reviewed for the Assistant Manager to renew their FOODSAFE Level 1 or equivalent course training by re-taking a FOODSAFE Level 1 or equivalent course prior to the expiration date on their FOODSAFE Level 1 certificate.
