Comments

Walk in, breakfast/juice, and dining room coolers are all at 4 C or colder. Temperature records are up-to-date- good.
Hot holding: The steam table is being pre-heated - good. Food temperature is above 60 C - good.
Hand washing: Liquid soap and paper towels are available in breakfast area, main kitchen, and dining room hand sinks.
Cleaning - very good. Add cleaning under the breakfast shelves (by double sink - dishwasher side) to your cleaning schedule.
Dishwasher has a hot water final sanitizing rinse (71 C/160 F measured inside of the machine and 82 C/ 180 F shown on the gauge).
Quats sanitizer is being dispensed at 200ppm - good.
The sanitizer bucket used to store wiping cloths was being changed during inspection (prior to dinner service). Sanitizer is changed every 2 hours as per staff.
Meat slicer - is cleaned and sanitized after use.
Kitchen lighting and organization is good.
Food Safe refresher information provided.
Discussed emergency and listeria recommendations.
