Comments

A routine inspection was completed:
- Coolers 4C of colder; freezers -20C or colder; hot holding units above 60C; thermometers present and temps recorded daily.
- Low temp dishwasher had a [Cl2] between 50-100ppm. Test strips present.
- Glasswasher had [I2] of 12.5ppm. Test strips obtained and used daily to ensure strength is correct.
- Quats sanitizer in spray bottles and cloth buckets had strength of 200ppm. Ensure the sanitizer in cloth buckets is changed every 2 hours with new solution.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on racks or shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- Exhaust canopy and filters are clean. They were professionally cleaned in March 2024 and next service due in June 2024, as per service sticker. Staff remove and clean the exhaust filters every 2nd day. Good job.
- No signs of pests. Glue traps and tin cans present for monitoring purposes. A professional pest company is contracted to monitor for pests.
- Valid, FoodSafe certified staff present.
- All in order.

ACTION
- The floors along the perimeter of all walls, especially those under equipment, shelves and tables have accumulated grease, water and food debris. This is also seen in the walk-in-cooler and walk-in-freezer. Clean these areas more thoroughly or more frequently.
- The lower shelves or cupboards in the kitchen food prep area have accumulated food debris. Clean these areas more frequently, and ensure staff are removing all items off the shelves and cupboards before cleaning.
