Observation (CORRECTED DURING INSPECTION): It was stated that plastic food containers used for mixing yogurt are sprayed down with a glass cleaner after use then rinsed with water. It was stated that containers are then filled with hot water and allowed to sit before discarding water and allowing containers to dry.
Corrective Action(s): Ensure that all food equipment and utensil are properly washed, rinsed, and sanitized with a sanitizing solution designed for food contact surfaces to prevent potential chemical contamination of food. Sanitizer powder concentrate is available on site. Ensure that manufacturer's directions are followed for preparation of sanitizer (required: 200 ppm quats). It is recommended to obtain test strips to test sanitizer concentration.

Observation: No thermometer observed in under counter cooler.
Corrective Action(s): Ensure that all cold holding units are equipped with thermometers accurate to 1 degree C in order to verify cooler/freezer temperatures. Date to be corrected by: December 21, 2018.

Observation: Only staff member on duty at time of inspection does not hold a certificate for the completion of FOODSAFE Level 1 or its equivalent.
Corrective Action(s): Ensure that at all times in the operator's absence, at least one person on site holds FOODSAFE Level 1 or its equivalent. Date to be corrected by: Today. This is a regulatory requirement. Have additional staff trained as needed in order to fulfill this requirement. Note: This is a repeat violation.

- Upright cooler at 4 degrees C
- Shake hopper mix at 2 degrees C (internal)
- Upright freezer at -13 degrees C
- Three sink plugs, hot and cold running water, and detergent available for manual ware washing.
- Quaternary ammonium compounds (quats) concentrate available on site for sanitizing. Reminder to ensure that manufacturer's directions are followed for preparation of sanitizer.
- Hand washing station is unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- General sanitation good
- No signs of pest activity observed at time of inspection
Note: Store Manager arrived on site at end of inspection. Manual ware washing procedures were discussed with management at time of inspection--no concerns`. Ensure that all staff are aware of proper manual ware washing procedures. FOODSAFE requirements were also discussed.
