304 - Premises not free of pests [s. 26(a)] Observation: Low levels of rodent activity still observed throughout restaurant: 1) One deceased mouse in a trap underneath salad prep cooler at front of house 2) Rodent droppings observed in the following areas: - On the bottom shelf of the front counters of the restaurants, especially at the back corners - In the crevice area across from the ice machine - Along the wall to the right of the warewashing sinks Corrective Action(s): Saturate all rodent droppings with 1 part bleach, 9 parts water solution and remove after 15 minutes. Continue to work with your professional pest control company to tightly seal up any small holes or entranceways. Sanitation is also key - ensure that all of your dry storage products remain tightly sealed, and that any spills are prompty mopped. Date to be corrected by: today and ongoing Violation Score: 9
