All coolers were </= 4C - All freezers were </=-18C - Handsinks had liquid soap, hot water + paper towel - All hot-holding units were >/=60C. Pizza discarded after 2 hrs. Roast sirloin discarded after 4 hrs or sooner if less than 60C. Temp checked every 2 hrs + logged. - Meat slicer cleaned every 4hrs or sooner. - Quats sanitizer was @200ppm in spray bottles and at 200ppm in third compartment sink after correction (was @ 0ppm) - High temperature dishwasher reached 71.9C upon final rinse cycle. - Good record keeping of temperatures in place. - No signs of pest activity observed - Facility in adequate sanitary condition.
