Observation (CORRECTED DURING INSPECTION): Observed trays of eggs stored above a bucket of pickes in the walk-in cooler.
Corrective Action(s): Eggs must be stored any ready to eat foods such as vegetables or salad items. Ensure all other raw meats and poultry items are always stored BELOW any ready to eat meats, salads and other cooke items.

Observation: Mice droppings noticed on the under-coounter shelves across from the dishwasher and food preparation sink.
Corrective Action(s): Remove all items, equipment, dishes and utensils from this area. Wash and sanitize all utensils annd dishes. Clean all mice dropping and place monitoring devices (immediately).

Comments

1. Walls in the dishwashing area ( under the dish table) will be re-finished within a couple of weeks.
2. Baseboards have been installed in the serving area.

Following items require your immediate attention:
1. Remove the old oven and other equipment from dry storage area as this could provide harborage for rodents.
2. Clean floor underneath all dry storage shelves
3. Clean floor underneath the cook line.
4.Remove excess foam sealant from behind the beverage cooler and clean this area to remove debris
5. Repaint the cabinet underneath the serving area hand sink.
6. Relocate the potato fry cutter to a clean area away from the dishwashing line.
7. Clean and organize the bar area. Ensure nothing is stored on the floor.
8. Remove all thumb tacks from bulletin boards located near the food handling and storage areas.
9. Remove all unnecessary items from the premises as this will help in cleaning better and prevent pest harborage.
