Corrective Action(s): Ensure that the wall around the two compartment sink beside the dishwasher is smooth, impervious to moisture, and easy-to-clean. Correct by Dec 1, 2016.

Observation: Two door prep cooler air temperature is 9-10 C and food temperature is 8 C. This cooler is being used to store mainly lower risk foods. The cooler was defrosted and your records show it was colder in the morning.
Corrective Action(s): Do not store smoked salmon or cooked eggs in this cooler (corrected during inspection).
Only store lower risk foods (bread, pickles, etc.) in the 2 door cooler.
Fix this cooler so it can be used for PHFs and keeps a temperature of 4 C/ 40 F throughout the day.
