Comments

A routine inspection completed:
- Coolers 4C or colder; freezers -19C or colder; hot holding above 60C; and thermometers present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher had a rinse cycle temperature of 75.9C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in spray bottles had strength of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins below RTE foods; and food stored 6" off the floor on racks or platforms.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests.
- All surfaces and equipment are in good working order.
- Valid, FoodSafe certified staff present.
- Exhaust canopy and filters are clean and were professionally done in October 2023. Next service due in April 2024, as per service sticker.
- Valid health permit and decal posted.

ACTION
- There is accumulated dust on the upper walls, ceiling tiles and on the window screens. Clean these areas, and ensure they are being done a regular basis to prevent accumulation. Suggest using a kitchen degreaser to remove the dust and oil on these surfaces.
- Obtain Quat test strips in order to test the strength of the Quats sanitizer on a daily basis, to ensure it is the correct strength.
- Develop a cleaning schedule for all equipment and surfaces, so staff understand what is needed to be done if the kitchen manager is absent. This is a proactive approach to preventing the accumulation of dust and debris as well.
