Observation: - Mold/mildew noted on the interior of the ice machine. Food service staff reported ice is only used for cooling not as an ingredient or in beverages.
Corrective Action(s): - Discard all ice from bin. Clean and sanitize interior of ice machine according to manufacturer's instructions. Clean and sanitize ice machine regularly as part of the regular cleaning schedule (sanitation plan). [Date to be corrected by: 03-Sept-2021]

Comments

- Handwashing sinks supplied with liquid soap and paper towel
- Premises maintained in sanitary condition
- Dry storage room organized with food items stored off of the floor
- Coolers were operating at 4C or colder:
- Walk-in cooler 3C
- Glass door reach in cooler 4C
- Food in the walk-in cooler was protected from contamination (ie. wrapped/covered)
- Walk-in freezer was -14C
- Cooler and freezer temperatures are monitored and recorded twice daily. Ensure that corrective action is recorded if temperature requirements are not met.
- High temperature dishwasher operational and met required sanitizing temperature. Temperature at dish surface was 80C as measured with min/max thermometer
- Quats disinfectant/sanitizer (Ostrosan) available from dispenser (adjacent to silverware soak and floor cleaner). Staff reported product is used for general disinfection of high touch surfaces.
- Chlorine sanitizer (L T sanitizer) present from dispenser at 3 compartment sink and is used for sanitizing dishes when washed manually and for storing in use wiping cloths. Concentration measured 200ppm chlorine from dispenser and in buckets where in use wiping cloths were stored.
*Obtain chlorine test strips to check concentration of chlorine sanitizer and update log sheet to include column this. Ensure staff responsible for checking the concentration are trained and understand which test strips to use. Only quats test strips are currently present in kitchen which cannot be used for checking chlorine sanitizer concentration.
