Observation (CORRECTED DURING INSPECTION): Dishwasher final rinse only reached 58C (~112F) at start of inspection. Booster heater reset by staff and then final rinse reached >71C at the dish level shortly after.
Corrective Action(s): Ensure dishwashing staff are monitoring regularly throughout the day and if final rinse temperature drops, notify appropriate staff to have the booster reset again. If booster heater does not turn back on after being reset then switch to manually sanitizing dishes until repair complete.

Comments

Email received from Head Chef stating repair company came in and determined that he booster heater is faulty. Booster heater works then shuts off after a day or so and needs to be reset to turn it back on. New booster heater on order and expected in about 2-3 weeks.
