Observation (CORRECTED DURING INSPECTION): A few knives and utensils stored on a plastic tray with a cloth liner had food debris on them.
Corrective Action(s): Clean and sanitize the aforementioned knives and utensils. Do not store them on cloth as it is made from porous material and can not be sanitized properly.

Observation: Stainless steel bowl was stored inside the soy sauce tote in the walk-in cooler as a scoop.

- Coolers (Sushi bar, stand-up coolers, walk-in, under the counter) at 4C or less.
- Walk-in and under the counter freezer functional.
- Hot food hot held above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single-use paper towels.
- High temperature dishwasher registered 74C at plate level.
- Ice machine maintained in sanitary condition.
- No pest activities observed.
- Temperature records not maintained. Ensure temperatures are monitored and recorded on a daily basis.
