301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Wiping cloths were observed stored on food preparation surfaces and counter tops. The cloths were dry and were used frequently to wipe food contact surfaces without being sanitized between uses. At one point, the dry sanitizing cloth was rinsed out in the dirty dish water in the two compartment sink. No wiping cloth sanitizer was in use.
Corrective Action(s): Prepare a sanitizer solution and place the wiping cloths in the solution between uses to ensure that contamination (bacteria) on the cloth is not transfered from food contact surface to food contact surface (cross-contamination).

Observation (CORRECTED DURING INSPECTION): Dishwasher final rinse sanitizer residual measured zero ppm Cl. The residual must measure at least 50 ppm Cl. Adjust/repair the sanitizer feed to achieve a final sanitizer residual of at least 50 ppm Cl.
Corrective Action(s): The sanitizer reservoir was almost empty and the feed wand was not drawing sanitizer. The reservoir was changed and the sanitizer prime switch was activated. The final rinse sanitizer residual measures 50 ppm Cl.
