Comments

Handsinks were adequately supplied with liquid soap, hot and cold running water, and either single-use paper towels or hand dryers.
Walk-in-cooler and other coolers were at or below 4 degrees C.
Walk-in-freezer and freezer near the cook line had satisfactory temperatures.
Note: Ice cream freezer was empty and not in use at the time of inspection. Ensure this freezer is maintained at or below -18 degrees C prior to re-stocking it with ice cream.
Time-tracking procedures were in place for condiments.
Hot-held food was at or above 60 degrees C.
Raw meat patties were stored separately on a storage rack from ready-to-eat food inside the walk-in-cooler.
200 ppm QUATS sanitizer was available in the sanitizer pails and from the dispenser.
QUATS test strips were available on-site.
3-compartment sink was supplied with hot and cold running water. Ware-washing was not occurring at the time of the inspection.
Prep. sink was operational.
No signs of recent pest activity were evident at the time of inspection.
